Ingredients

  • 2 1/4 cups Knorr® Vegetable Broth
  • 1 cup uncooked whole grain brown rice
  • 1 can (320 g.) mandarin oranges, drained
  • 2 cups arugula
  • 1 cup chick peas
  • 1/4 cup finely chopped red onion
  • 2 Tbsp. olive oil
  • 1 Tbsp. balsamic vinegar
  • 1/4 cup sliced almonds, toasted

Directions

  • Bring Knorr® Vegetable Broth to a boil in medium saucepan. Stir in rice and return to a boil. Reduce heat to medium-low and simmer covered 25 minutes or until rice is tender. Fluff with fork; cool.*
  • Combine cooked rice with remaining ingredients in serving bowl. Serve at room temperature or chill, if desired.
  • *SUBSTITUTION: Use 1 cup quinoa, cooked in 500 mL (2 cups) Knorr® Vegetable Broth, according to package directions, instead of rice.
