Ingredients

  • 1 package Knorr® Sidekicks® Parmesan Pesto Pasta Side Dish
  • 1 cup drained bocconcini pearls*
  • 2 cups cherry tomatoes, chopped
  • 1/4 cup pine nuts, toasted
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup kalamata olives, pitted and chopped
  • 1 Tbsp. olive oil
  • 1 Tbsp. lemon juice

Directions

  • Cook Knorr® Sidekicks® Parmesan Pesto Pasta Side Dish according to package directions and let cool.
  • In a large bowl, combine cooled Knorr® Sidekicks® Parmesan Pesto Pasta Side Dish, bocconcini, cherry tomatoes, pine nuts, basil, olives, olive oil and lemon juice. Blend gently until combined. Season pasta salad with salt and pepper to taste.
  • Great side for a summer BBQ! Make the day before and refrigerate to save time.
  • * bocconcini pearls are found in the cheese section of you local grocery store. If you cannot find pearls, regular-size bocconcini cut into cubes work just as well. Each serving of this salad is a source of fibre, vitamin C and iron.
