Fajita Chicken with Santa Fe Style Rice

Ingredients

4 boneless, skinless chicken breasts 4
5 mL ground cumin 1 tsp.
5 mL dried oregano leaves 1 tsp.
15 mL vegetable oil 1 Tbsp.
1 large onion, thinly sliced 1
1 medium green pepper, thinly sliced 1
375 mL mild or medium salsa 1-1/2 cups
1 pkg. Knorr® Sides Plus™ Veggies Santa Fe Style Rice, prepared according to package directions 1 pkg.

Directions

Season chicken with cumin and oregano. Heat 1 tablespoon vegetable oil in large skillet and brown chicken. Remove chicken and set aside.

Cook onion and green pepper in same skillet over medium heat, stirring occasionally, 5 minutes or until vegetables are tender. Stir in salsa and bring to a boil over high heat. Reduce heat and return chicken to skillet.

Simmer covered 10 minutes or until chicken is thoroughly cooked. Serve with hot Knorr® Sides Plus™ Veggies Santa Fe Style Rice.
